Directions
1. Roast the Ragi: Heat ghee in a pan. Add ragi flour and roast on low flame for 3-4 minutes, stirring continuously until aromatic and slightly darker in color.
2. Add Coconut Milk & Sweetener: Slowly pour in coconut milk, stirring to avoid lumps. Add monk fruit or stevia and mix well.
3. Flavor & Thicken: Add cardamom powder and continue stirring until the mixture thickens and starts leaving the sides of the pan (around 5–7 minutes).
4. Set the Barfi: Transfer the mixture onto a greased tray or plate. Spread evenly and allow it to cool completely.
5. Cut & Serve: Once firm, cut into squares or diamonds. Store in an airtight container for up to 3 days (refrigerated).
